Bigger cylinders. The other engine may have more cylinders (i.e V10 with 10 cylinders in two banks of five; V12 with 12 cylinders in two banks of six) but the cylinder bore is smaller than the V8 engine which has a larger cylinder bore so actually the displacement in the V8 engine is more.

Example would be a V8 5.7 that’s 5.7 liters of displacement which is measured by cylinders bore and stroke of the pistons. Which I should mention, stroke is the distance the pistons travel on a full up and down stroke from BBC to TDC.
The V10.or V12. has more pistons but smaller pistons and cylinder bore so engine displacement in liters is most of the engines are smaller.
V8. 5.7 L
V12. 5.3L
The reasons for the smaller pistons and adding cylinders is to get more RPM out of the  engine.
Smaller pistons on a shorter stroke can move up and down faster than the larger pistons on a longer stroke. 

The large pistons with the larger intake and exhaust valves sing a tune no other engine can match. BTW the larger valves and combustion chamber  which is the engine heads and intake, exhaust system is bigger so engine has more  air flow which also helps the sound of the V8.
